Jamaican Breeze Cocktail:

Recipe: 1.5 oz Malibu rum, 1 oz ginger syrup, 2 oz pineapple juice, 3 dashes Orange bittters

(Now this recipe is over 10 years old and so I don't use Malibu Rum anymore as its too sweet and low on alcohol. LCBO liquor store doesn't even put it with the "rums". So use any coconut rum that you may have).

Method: Shake all the ingredients in a shaker and strain into a double rocks (old-fashioned) glass with fresh ice. Garnish: orange wheel

If you don't want to make the ginger syrup, you can use slices of ginger into your shaker and muddle it with other ingredients but you have to double strain to not get pieces of ginger in your end product.

Plata Fresca Cocktail:

Recipe: 1 oz silver tequila, 0.5 oz Galliano, 0.5 oz Maraschino cherry liqueur, 0.5 oz lime juice, top with vanilla bean soda.

Method: Build this into a Collins glass with fresh ice. Garish with a lemon slice

Note: you can substitute the Vanilla bean soda if you can't find it with 7up

Chambord Colada Cocktail:

Recipe: 1 oz Chambord, 1 oz white rum, 0.5 oz cream of coconut, 2 oz pineapple juice

Method: Shaken and then poured into a rocks glass with fresh ice and garnished with a half orange wheel and cherry on a stick

Note: For people who like darker or spicier rums, you can use your favorite.

Thailand Escape Cocktail:

Recipe: 0.5 oz Chambord, 1 oz of white rum, 2 oz lychee juice, 1oz pineapple juice, 0.5 oz ginger syrup, 0.5  oz coconut syrup, 3 dashes of cherry bitters.

Method: Shaken and placed into a hurricane glass with fresh ice.

 

Blancafuoco Cocktail:

Recipe: 2 oz white (blanc) tequila, 0.5 oz Galliano, 0.5 oz maraschino liqueur, 0.5 lemon juice, and club soda

Method: Shaken and strained into a Collins glass with fresh ice. Top with club soda.  Garnish: orchid

Fred Collins Fiz Cocktail:

Recipe: 1.5 oz C.C., 0.5 simple syrup, 1 tsp triple sec, 0.5 lime juice, 3 dashes of chocolate bitters, top with lemonade (you can always add more dashes of the bitters to your liking.

Method: shake and strain in Collins glass with fresh ice. And top off with the lemonade and the dashes of bitters..

 

Bumbu Old-Fashioned recipe:

Recipe:

2 oz Bumbu rum, 4 dashes of molasses bitters, 4 dash of orange bitters, 1 oz simple syrup

Method:

Stir in rock glass; garnish with orange peel

NOTE: Use your favorite rum if you don't have the Bumbu (which is delicious I might add) You will see a difference though as this rum has tons of notes like banana, vanilla, etc.

Full Deck cocktail (James Bond) recipe:

Recipe:

1oz white rum, 1 oz pineapple juice, 0.5 oz maraschino liqueur, 0.25 oz lemon juice, Vanilla bean soda

Method:

Shake all but the vanilla bean soda into a shaker and strain into a chilled martini glass and top with vanilla bean soda...garnish: orange peel

Blue Fusion recipe:

Recipe:

1 oz spiced rum, 0.5 oz blue curacao, 0.5 oz vanilla bean syrup, top with lemonade, 0.5 oz lime juice

Method:

Shake all but the lemonade and strain into Coolins glass with fresh ice and top with lemonade, garnish orange wedge and cherry on a skew
