Episode 91: Mojito Cocktail and variations
Original Mojito Recipe:
Recipe: 2 oz white rum, 1 oz simple syrup, 1 oz lime juice, 6 to 8 leaves of mint , club soda
Method: Build this all in the Collins (highball) glass ; add mint leaves , simple syrup and lime juice, Muddle; add rum and ice, top with club soda
Note: you can use varies rums instead of white (demerara, aged, or dark); you can switch out the simple syrup with demerara syrup, or top with half mix of club soda water and 7up.
Coconut Mojito Recipe:
Recipe:1 oz white rum, 1 oz coconut tum (or 2oz coconut for the rums), 1 oz coconut syrup, 1 oz lime juice, 6 to 8 leaves of mint, club soda

Episode 92: Talk Like a Pirate (French Pirate cocktail)
Original Recipe:
Recipe: 2 oz dark rum, 1 oz Cointreau, 3/4 oz St Germain Liqueuer, juice of lime, 1 teaspoon Falernum, and 2 dashes of Bitters
Method: Shake all but the bitters and unstrained into a large mug or Collins glass and add the dashes of bitters on top, garnish with orange peel and cherry
Note: you can use varies rums instead of dark (demerara, aged, or white).
My version of the Recipe:
Recipe: 1 oz Pusser's rum, 0.5 oz Cointreau, 0.5 oz St-Remy VSOP brandy, 0.5 oz simple syrup, 0.5 oz lime juice, barspoon of Falernum
Method: Shake all the ingredients and double strain into a coupe or daquiri glass and garnish with a cherry.

Sand and Sea Recipe:
Recipe: 1 oz white rum, 1 oz passion fruit juice, 1 oz pineapple juice, 1 oz blue curacao
Method: Build this in a Collins glass with ice except blue Curacao which will be floated on the top…garnish: pineapple wedge

Recipe:1.5oz rum (dark rum ) Ron Zacapa 23, 1 oz ginger syrup, 0.5 oz falernum, 1 oz pineapple juice, 1 oz lime juice
Method: Shake all ingredients and pour unstrained into a Collins glass, garnish pineapple wedge and cherry on a skew

Island Holiday Recipe:
Recipe: 1/2 oz light rum, 1 oz aged Jamaican rum (Appleton X/V), 1 oz Midori/crème de menthe dark, 2 dashes bitters or 1 tsp allspice dram, 3/4 oz cranberry syrup, 1/2 oz cream of coconut, 1/2 oz lime juice
Method: In a small glass, stir together cranberry syrup, Jamaican rum and bitters. In another small glass, stir together cream of coconut and light rum. In another small glass, stir together Midori/crème de menthe dark and lime juice. Fill a rocks glass or a highball glass 1/3 of the way with crushed ice. Pour in red layer. Add in more crushed ice until the glass is 2/3 full. Carefully pour in white layer. Fill glass to the top with crushed ice and carefully pour in the green layer. Garnish: Candy Cane
Note: yes, there is some layering; use the crushed ice to help you with that.
Rudolph's Night Off Recipe:
Recipe: 2 oz White Rum, 2 oz Pomegranate Juice, 1/2 oz Lemon Juice, 2 - 4 oz Ginger Beer and 1 Rosemary Sprig

1956 Trader Vic's Mai Tai Recipe:
Recipe: 1½ oz Trader Vic’s Puerto Rican Rum, ¾ oz Myers’s Plantation Punch Rum, Juice of One Lime, Dash of Rock Candy Syrup, Dash of Curacao, Dash of Orgeat
Method: Build in a rock's glass , first drop half lime shell in rocks glass; add ingredients and stir and decorate with fresh mint

Rock Candy Syrup is 2:1 ratio sugar to water that is heated up til dissolved. Lower the heat and simmer for 15 minutes and then cool down and bottle)
1961 Trader Vic's Mai Tai Recipe:
Recipe:1 oz Light Rum, 1 ounce of Dark Rum, ⅓ oz Orgeat, Dash Orange Curacao, Juice of half a fresh Lime, 1½ oz Orange Juice, 1½ oz Pineapple Juice
Method: In a Rock's glass, Stir with crushed ice and then add a float of 1 ounce of Dark Rum

Tapa Punch Recipe:
Recipe: 3oz Dark Jamaican Rum, 1oz White Puerto Rican Rum, 1/2oz Peach Flavored Brandy, 3oz Sweet and Sour Mix (1 1/2oz simple syrup, 3/4oz lime juice, 3/4oz lemon juice)
Method: Pour into tall glass filled with pebble ice and stir. Garnish with a pineapple wedge, and a cherry.

Recipe: 1.5 oz Gold Puerto Rican rum, 1 oz sweet vermouth, 1/2 oz orange Curacao, 1/2 oz creme de cacao (white or dark), 2 oz lemon juice, 3 oz orange juice
Method: IN A COCKTAIL SHAKER: combine all ingredients and some crushed ice, shake til diluted and then strain into a Hurricane glass with fresh ice. Garnish with a pineapple wedge and a plastic monkey figurine

Beach Bum Berry's Recipe:
Recipe: 1 oz Jamaican rum, 1 oz orange juice, 3/4 oz fresh lime juice, 3/4 oz white grapefruit juice, 3/4 oz honey mix and a dash of Angostura bitters
Method: Shake well with plenty of crushed ice. Pour unstrained into a Collins (highball) glass and garnish with a lemon wheel.

Ron Rico's Recipe:
Recipe: 1.5 oz Bacardi 8 or any Puerto Rico aged rum, 1/4 oz White Creme de Cacao, 1/2 oz (I used 1/4 oz) of Green Chartreuse, 1/2 oz lime juice and 1 oz pine apple juice.
Method: Shake all ingredients in a shaker with ice, doubke strain into a coupe glass and garnish with a mint leaf.
